Remove Silver Fern Farms Lamb Steaks from the fridge and packaging and allow to bloom at room temperature for 10 mins
In a food processor combine the herb coating ingredients. Process until smooth and massage into the Lamb Steaks. Cover and leave to rest for 15 mins.
Heat a frying pan or BBQ. Cook the Lamb Steaks for 4 mins each side. Put on a plate. Cover with tinfoil and leave to rest for 5 mins. Deglaze the pan with remaining marinade.
Serve on a chickpea ragout topped with the Lamb Steaks. Drizzle pan juices over the Lamb Steaks. Garnish with blanched spinach leaves.
