Beef Burgers with Caramelized Onion and Sweet Potato Fries

Preheat the oven to 425°F. Cut the sweet potatoes into 1/4 inch wide fries. Pat dry to remove excess moisture. Place the fries into a large bowl. Drizzle over the olive oil. Combine the cornstarch, paprika, garlic powder and oregano in a separate bowl then sprinkle evenly over the fries. Toss until evenly coated.
Spread the fries in a single layer on a baking sheet lined with parchment. Bake for 15 minutes, turn fries then return to the oven for a further 15 minutes or until they are crispy and golden. Remove from the oven and salt before serving.
To prepare the onions, heat the olive oil in a small skillet and cook the sliced onions over a medium low heat until they start to soften. Add the balsamic vinegar and brown sugar. Continue cooking over a low heat, stirring often until the onions are soft and caramelized. This will take about 10 minutes. Set aside.
Meanwhile, remove the Silver Fern Farms ground beef from the fridge and packaging and allow to bloom for 10 minutes at room temperature. Shape into 4oz balls and flatten into burger patties before seasoning with salt and pepper.
Heat a large heavy skillet, barbecue or chargrill pan over medium high heat. Brush the burger patties with a little olive oil then cook them for 3 to 4 minutes on each side until cooked through. Add a slice of cheese to each patty if desired and allow cheese to melt slightly before removing from the heat.
Place lettuce leaves on each bun. Top with a patty, Caramelized Onions, tomato slices, some pickles, mustard and ketchup. Place bun top on top of the burger.
Serve with the Sweet Potato Fries.
