Heat the oven to 200°C. Place the kumara in a large roasting dish. Drizzle with oil and toss to coat. Arrange in a single layer and sprinkle with salt. Cook for 30 minutes or until cooked and starting to colour.
Remove the Silver Fern Farms Honest Lamb Burgers with Apple and Mint from the fridge and packaging and allow to bloom at room temperature for 10 mins.
Bring a fry pan to med-high heat, cook burgers for 5-6 mins each side, piercing after flipping to allow the juices to run free. During the last few mins of cooking, place a slice of cheese on each patty and cover the pan with a lid to let the cheese melt.
Lightly toast the burger buns on a separate pan or grill until golden.
Spread a generous layer of sour cream on both halves of the toasted burger buns.
Place salad leaves on top of the sour cream.
Add the burger with melted cheese. Spread 1 tsp of mint jelly over the cheese.
Top with a generous amount of grated carrot and beetroot.
Finish with the top half of the burger bun.
Serve the burgers with kumara fries alongside.
