Truffle Mayonnaise:
Beef Brisket Truffle Sliders
To make truffle mayonnaise, add egg, white wine vinegar, and salt to a cup or jar that fits your immersion blender.
Turn blender on and gradually pour in 1/3 olive oil until the mixture starts to emulsify. Pour remaining olive and truffle oils, blend until oil is emulsified.
Heat oil in a fry pan, add onions and salt, cook slowly for 20 mins, mixing occasionally.
Once onions are cooked, add sugar and balsamic vinegar. cook for 5–10 mins, stirring frequently to prevent sticking.
Preheat a skillet pan on high heat.

Cook sliders from frozen, following the instructions on pack.
To serve, layer the buns with the truffle mayonnaise, watercress, slider, cheddar, caramelised onions and shaved parmesan.
