  • 1 pack Silver Fern Farms PURE 97% Beef Sliders with Brisket 
  • 2 Tbsp olive oil
  • 3 red onions, sliced
  • 2 Tbsp brown sugar
  • 2 Tbsp balsamic vinegar
  • 10 slider buns
  • 10 cheddar cheese slices
  • ¼ cup shaved parmesan cheese
  • Watercress, to serve


  • 1 egg, large
  • ½ tsp salt
  • 1 Tbsp white wine vinegar
  • 200ml light olive oil
  • 2 Tbsp truffle oil

To make truffle mayonnaise, add egg, white wine vinegar, and salt to a cup or jar that fits your immersion blender.

Turn blender on and gradually pour in 1/3 olive oil until the mixture starts to emulsify. Pour remaining olive and truffle oils, blend until oil is emulsified.

Heat oil in a fry pan, add onions and salt, cook slowly for 20 mins, mixing occasionally.

Once onions are cooked, add sugar and balsamic vinegar. cook for 5–10 mins, stirring frequently to prevent sticking.

Preheat a skillet pan on high heat.

Remove Silver Fern Farms 97% Beef Silders with Beef Brisket from the freezer and packaging.

Cook Beef Sliders with Brisket from frozen, following the instructions on pack.

To serve, layer the buns with the truffle mayonnaise, watercress, beef sliders, cheddar, caramelised onions and shaved parmesan.
