Preheat oven to 180°C.
Remove Silver Fern Farms Beef Medallions from the fridge and packaging and allow to bloom at room temperature for 10 mins.
Bring a fry pan to med-high heat, coat beef with oil and place in pan. Sear for 2-3 mins each side, remove from heat, cover loosely, and allow to rest for 5 mins. Cook capsicums and onion for 5 mins.
Place beef, capsicums and onions into a casserole dish. Add remaining ingredients, season to taste with salt and pepper.
Cover with lid, bake in the oven for 1 hour. Remove lid and bake for another 30 mins.
Garnish with oregano leaves or parsley leaves and serve.
