To prepare the marinade, mix onion, garlic, and lemon juice together in a food processor, mix in oregano, salt, and pepper.
Remove Silver Fern Farms Lamb Loin Fillets from the fridge and packaging. Chop the lamb into bite-sized chunks. Combine with the marinade and add olive oil. Chill and leave to marinate overnight or for at least 2 hours.
If using bamboo skewers, soak in water for at least 30 mins.
Remove lamb from the fridge and allow to bloom at room temperature for 10 mins.
Thread the lamb, lemon chunks, and olives onto the skewers.
Using a BBQ, grill, or large cast-iron fry pan, sear the lamb until browned, turning the skewers to cook them. Fry any excess marinade and drizzle over the cooked skewers.
Serve with salad greens, extra lemon, and extra olives.
