Chipotle Lime Beef Flat-Iron Steaks with Tomato Salsa & Black Bean & Avocado Salad recipe

Ingredients
  • 1 pack Silver Fern Farms Beef Flat-Iron Steaks
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • 1 garlic clove, crushed
  • 1 tsp brown sugar
  • ¼ - ½ tsp chipotle powder
  • Flour tortillas, sour cream, extra coriander to serve

TOMATO SALSA

  • 2 tomatoes, finely chopped
  • 1 small roasted red capsicum, finely chopped
  • 1 tsp hot chilli sauce
  • 2 Tbsp coriander, chopped
  • 1 lime, juice of 

BLACK BEAN AND AVOCADO SALAD

  • 400g can black beans, drained and rinsed
  • ½ small red onion, finely diced
  • ½ avocado, diced
  • 2 radishes, thinly sliced
  • 1 lime, juice of

Method

Remove Silver Fern Farms Beef Flat-Iron Steaks from the fridge and packaging and pat dry. Combine the olive oil, lime juice, garlic, brown sugar and chipotle powder in a small bowl. Add the Beef Flat-Iron Steaks, coat well with the marinade then cover and stand for 10 mins at room temperature.

Meanwhile, prepare the salsa. In a bowl, combine the chopped tomatoes, red capsicum, hot chilli sauce, coriander and lime juice. Season well. Set aside.

To prepare the salad, combine the black beans, red onion, avocado and radishes. Add lime juice, season and toss to coat.

Remove the Beef Flat-Iron Steaks from the marinade and season with salt and pepper. Heat a frying pan or BBQ over medium-high heat. Cook Beef Flat-Iron Steaks for 3-4 mins on each side for medium-rare. Transfer to a plate, cover with foil and rest for 5 mins.

To serve slice Beef Flat-Iron Steaks thinly across the grain. Serve with warmed tortillas, the salsa, salad and sour cream. Garnish with extra coriander.
