Sesame Dressing:

To prepare the dressing, combine sesame seeds, soy sauce, sesame oil, mirin and ginger in a small bowl. Set aside.
Remove Silver Fern Farms Beef Medallions from the fridge and packaging and allow to bloom at room temperature for 10 mins.
Bring a fry-pan to med-high heat.
Cook beef for 3 mins each side for med-rare.
Remove from heat, cover loosely, and allow to rest for 5 mins before carving across the grain.
Meanwhile, cook the noodles following the packet directions and keep warm.
Place beef stock, star anise and miso or soy sauce into a medium saucepan and bring to the boil. Add bok choy and edamame and cook for 1-2 mins.
Divide noodles between 4 serving bowls. Use a slotted spoon to place some bok choy and edamame into each bowl. Spoon over some of the miso beef stock.
Place beef on top of each noodle bowls. Drizzle over dressing and garnish with spring onions and coriander.
