Barbecued Lamb Kebabs recipe

Ingredients
  • 1 pack of Silver Fern Farms Lamb Rumps
  • 8 mushrooms
  • 1 red onion, sliced into 8 wedges
  • 1 red capsicum, cut into 8 wedges
  • 1 Tbsp olive oil
  • 1 garlic clove, crushed
  • Chimichurri or pesto, to serve
  • Salt
  • Pepper

Method

Remove Silver Fern Farms Lamb Rumps from the fridge and packaging and allow to bloom at room temperature for 10 mins

Preheat BBQ or grill to medium heat.  Cut each Lamb Rump into 8 cubes. Season. Thread cubes onto 4 skewers alternately with vegetables. Brush with oil and garlic. 

BBQ or grill, turning continuously, for 5-6 mins or until cooked through.

Serve topped with chimichurri or pesto.

Tip: If using bamboo skewers, soak them in water for about 30 mins before threading with the ingredients. This will help prevent the skewers from burning.
