Preheat the oven to 200C fan-forced. Use a fork to pierce the kumara all over, then wrap each one in foil. Place in an oven dish and bake for 50-60 mins, or until soft.
Meanwhile, remove the lamb from the fridge and let it bloom for 10 mins. Season with salt and pepper and coat with oil.
Heat a cast iron grill pan and sear the lamb for 3-4 mins on each side. Remove from the pan and allow to rest before slicing.
Place the spinach in a sieve, then pour boiling water over it to quickly wilt it. Drain well.
Remove the foil and gently open up the kumara. Top with wilted spinach, sliced lamb, feta, and pesto. Season to tastecwith salt and pepper.
