Ingredients

  • 1 pack Silver Fern Farms Beef Flat-Iron Steaks

Tomato Dressing:

  • 2 large tomatoes
  • 1½ tsp smoky paprika
  • ¼ cup extra virgin olive oil
  • 2 cloves garlic, crushed
  • 2 Tbsp basil or parsley, chopped
  • ½ tsp Dijon mustard
  • 1 tsp lemon zest, finely grated

Method

Remove Silver Fern Farms Beef Flat-Iron Steaks from the fridge and packaging and allow to bloom at room temperature for 10 mins.

Rub with oil and season with salt and pepper.

To prepare tomato dressing, cut a cross on one end of each tomato. Blanch in boiling water for 20 seconds, then refresh in icy water. Peel, cool and remove core and seeds. Dice flesh finely and mix with paprika. Mix with remaining ingredients.

Bring a fry pan to med-high heat. Cook beef for 3-4 mins each side. Remove from heat, cover loosely, and allow to rest for 5 mins.

Slice beef across the grain, Serve topped with tomato dressing.
