Spicy Beef Tacos with Avocado and Lime Crema

Ingredients

  • 1 pack Silver Fern Farms Beef Flat-Iron Steaks
  • 3 cups red cabbage, finely sliced
  • 5 radish, thinly sliced
  • 1 large avocado, peeled and sliced
  • ⅓ cup pumpkin seeds, lightly toasted
  • Handful fresh coriander leaves
  • 1 red chilli, finely sliced
  • 8-10 soft flour tortillas
  • 1 cup whipping cream
  • 2-3 fresh limes
  • Pickled jalapenos

Spice Mix:

  • 1 Tbsp cumin, ground
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp chilli flakes

Spicy Beef Tacos with Avocado and Lime Crema

Method

Combine ground cumin, paprika, garlic powder, chilli flakes and salt and pepper.

Remove Silver Fern Farms Beef Flat-Iron Steaks from the fridge and packaging, rub with spice mix, cover and set aside for 10 mins to bloom at room temperature.

For the lime crema, whip the cream until it is just beginning to thicken, add the juice of half a lime, 2 tsp liquid from the Jalapeños and ½ tsp salt.

Continue to whip until it has thickened - transfer to a bowl and refrigerate until required.

In a bowl toss the shredded cabbage and sliced radish with juice of a lime, olive oil and a little salt. Taste and add more lime or salt if required. Set aside to marinate whilst you cook the beef.

Drizzle oil over the beef and season with salt and pepper. Cook on a grill pan or BBQ at med-high for 3-4 mins on each side for med-rare. Transfer to a plate, cover loosely with foil and rest for 5 mins.

While the beef is resting, in the same pan or BBQ, gently toast the tortillas to warm them slightly.

Slice your beef thinly across the grain. Take a warmed flour tortilla, add a spoonful or two of cabbage and radish salad.

Add a large slice of avocado, some coriander and two beef slices. Top with coriander leaves, some chopped chilli and one or two Jalapeño slices.

Top with a spoonful of crema, a sprinkle of pumpkin seeds and a squeeze of lime if needed.
