Ingredients
  • 1 pack Silver Fern Farms Beef Flat-Iron Steaks
  • ½ tsp caraway seeds
  • ½ tsp cardamom seeds
  • ½ tsp black peppercorn
  • ½ tsp turmeric
  • 2 Tbsp olive oil

Feta and Tomato Bake:

  • 200g feta 
  • 1 lemon, zest and juice 
  • ¼ tsp chilli flakes 
  • 2 stalks fresh marjoram or oregano
  • 300g small vine-ripened tomatoes
  • 2 Tbsp olive oil

Method

Remove Silver Fern Farms Beef Flat-Iron Steaks from the fridge and packaging and allow to bloom at room temperature for 10 mins.

Preheat the oven to 200°C. Break the feta up into 10 large pieces and place in the bottom of a baking dish. Sprinkle over lemon zest and juice and chilli flakes. Sit marjoram and tomatoes (still on the vine) on top and drizzle oil over. Bake for 15 mins, until the tomatoes are starting to split.

To make the spice mix, grind the spices together in a mortar and pestle or spice grinder. Rub the spice mix over the beef and coat with oil. Season to taste.

Bring a frypan or BBQ to med-high heat and cook the beef for 3 mins each side. remove from heat, cover loosely, and allow to rest for 5 mins before carving across the grain.

Place beef onto feta and tomato bake and serve.
