Remove Silver Fern Farms Beef and Horopito Pepper Burgers from the fridge and packaging and allow to bloom for 10 mins at room temperature.
Combine the mayonnaise, American mustard, tomato sauce, and gherkins in a small bowl. Season to taste, set aside.
Preheat a BBQ on high heat. Brush Beef and Horopito Pepper Burgers with olive oil then cook for 3½ mins each side, or until cooked through (cook for 4 mins each side if cooking on the stovetop).
Cover loosely on a plate to rest for 5 mins.
Add onions and cook for 3-4 mins or until golden and soft.
Cook eggs in olive oil on the flat plate of the BBQ or in a frying pan, fry sunny-side up for 4-6 mins or until done to your liking.
Spread burger sauce onto each toasted bun base. Add Beef and Horopito Pepper Burgers, onion, ketchup then a fried egg. Add lettuce leaves, 2 slices of tomato, and beetroot slices.
Spread more burger sauce on the underside of the bun top and place on top of the burger.
