Ingredients

  • 1 16oz package Silver Fern Farms Pasture-Raised Diced Venison
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 medium white onion, sliced
  • 1 lb potatoes, cut into bite size pieces
  • 1 can coconut milk
  • 2 Tbsp fish sauce
  • 2 Tbsp red curry paste
  • 1 cinnamon stick
  • Chopped fresh cilantro, for garnish

Method

In a large bowl, toss the venison in the olive oil and season with salt and pepper.

Preheat your grill to high, direct heat (approximately 450° F). For charcoal grills, place the grates directly over the coals. For gas grills, start all burners.

Place a Dutch oven directly on the grill grates and add the venison. Sear for 1 to 2 minutes on each side, or until golden brown. Set aside.

In the same Dutch oven, cook the onions for 5 minutes or until golden brown and tender.

Add the potatoes, coconut milk, fish sauce, curry paste, cinnamon stick, the seared venison, and top off with water to cover the potatoes.

Cover the Dutch oven and place back on the grill. Bring to a boil and simmer for 30 to 35 minutes or until the potatoes are fork-tender and the venison reaches 200° F on an instant-read thermometer.

Remove from the grill, allow to cool down for a few minutes, and plate. Garnish with cilantro and enjoy!
