Ingredients

For the salsa verde: 

  • ⅓ cup chopped fresh parsley
  • 2 Tbsp chopped fresh basil
  • 1 ½ tsp freshly squeezed lemon juice
  • ½ tsp lemon zest
  • 1 Tbsp minced gherkin or cornichon
  • 1 Tbsp chopped capers
  • 1 garlic clove, grated
  • 1 anchovy, minced
  • 2 Tbsp red wine vinegar
  • ¼ cup olive oil

For the steak and eggs:

  • 2 8oz Silver Fern Farms Net Carbon Zero 100% Grass-Fed Angus Beef Top Sirloin Steaks
  • Salt and pepper, to taste
  • Olive oil
  • 3 Tbsp butter
  • 2 garlic cloves, smashed
  • 1 small bunch each fresh rosemary and fresh thyme, tied together with cooking twine
  • 4 eggs

Method

To make the salsa verde: Combine the parsley, basil, lemon juice, lemon zest, minced gherkin or cornichon, capers, garlic, anchovy, red wine vinegar, and olive oil. You can also use a food processor to combine the ingredients while slowly incorporating the olive oil. Stir together and set aside.

Take the steaks out of the refrigerator 30 minutes prior to cooking. Pat dry and season with salt and pepper. Heat a cast-iron pan on high heat. Add a drizzle of olive oil. Sear the steaks 5 minutes per side, making sure the bottom of the steak makes full contact with the pan — do not move it during cooking.

Add the butter, garlic, and herbs. When butter starts to bubble, baste the steaks with it. For medium rare, cook the steaks until they reach 130° F on an instant-read thermometer.

Let the steaks rest for 5 minutes. While they are resting, prepare your eggs in whatever style you prefer.

Slice the steak into thin slices against the grain and spoon the salsa verde over the top, leaving some of the salsa for dipping. Place eggs next to the steak. You can also add salsa verde to the eggs — it makes a great topping for the entire meal.
