To make the steak: Heat grill to 400° F. Season steak with salt and pepper on both sides. Grill over direct heat for about 5 minutes per side, depending on the thickness, until internal temperature reaches 130° F on an instant-read thermometer for medium rare, or to your desired doneness. Let rest for 10 minutes before slicing. The inside of the meat will be pink and juicy.
To make the pasta: I used pappardelle for this dish, but you can use your favorite pasta, cooking according to package directions.
To make the Gorgonzola cream sauce: In a saucepan over medium heat, heat the heavy cream. Once it starts to simmer (about 5 minutes), add the Gorgonzola and whisk until the cheese is melted and the sauce thickens to your desired consistency. Remove from heat and add the chopped parsley and fresh cracked pepper. Serve immediately, drizzling over your steak and pasta.
